I make this easy salad almost every week. It’s a perfect light lunch or mid-afternoon snack. I often make a double batch and keep it in the fridge all week. It’s easy to customize with whatever ingredients you have on hand. I sometimes use garbanzos instead of white beans. If I want to “fancy it up” I use dried beans instead of canned. I think slow-cooking dried beans makes the bean salad even more rich and delicious. You can also swap in lime juice, or even use bottled lemon or lime juice. Some fun add-ins are feta cheese, olives, tabasco sauce, sesame seeds, sweet onion, cucumbers, or whatever else your heart desires.




Tuna & White Bean Salad
This simple salad comes together in minutes and uses many ingredients that you probably have in your pantry and fridge. Swap in your favorite type of bean and get creative on the add-ins!
Ingredients
- 1 can white beans,like Cannellini, drained
- 1 can tuna, drained I like to use albacore tuna in oil
- 2 cups celery, chopped
- 3 tbsp olive oil best quality
- juice of one lemon
- 1 tbsp Calabrian chili (optional)
- 2 green onions, chopped
- 2 tbsp parsley, chopped
- salt & pepper to taste
Instructions

Add all ingredients to a large bowl and mix well. Allow to rest in the refriderator for at least 2-hours. Serve cold or at room temperature. Store for up to 5-days in the fridge.

February 3, 2022 at 8:50 pmI add crumbled Feta, chopped Roma tomato, some sliced green and black kalmata olives in addition to your ingredients, and chopped Calabrian chilies instead of the ground, because I have a VAT of them thanks to my Calabrian mother in law 🙄 Also a little fresh oregano and cracked black pepper… Summertime in a bowl, not to mention a full meal lol.
