Tuna & White Bean Salad

Ingredients

  • 1 can white beans,like Cannellini, drained
  • 1 can tuna, drained I like to use albacore tuna in oil
  • 2 cups celery, chopped
  • 3 tbsp olive oil best quality
  • juice of one lemon
  • 1 tbsp Calabrian chili (optional)
  • 2 green onions, chopped
  • 2 tbsp parsley, chopped
  • salt & pepper to taste

Instructions

  1. Add all ingredients to a large bowl and mix well. Allow to rest in the refriderator for at least 2-hours. Serve cold or at room temperature. Store for up to 5-days in the fridge.

    I add crumbled Feta, chopped Roma tomato, some sliced green and black kalmata olives in addition to your ingredients, and chopped Calabrian chilies instead of the ground, because I have a VAT of them thanks to my Calabrian mother in law 🙄 Also a little fresh oregano and cracked black pepper… Summertime in a bowl, not to mention a full meal lol.
